Anybody know if the Acerbis Uniko hand guards will fit the 2007 Polaris Sportsmans?

they should, my Scrambler PowerMadd guards fit the same way and you have to allow for the space btwn the grip and controls, maybe angle them a little.

The answer is a difinitive NO. On the throttle side I had to buy a stock Polaris mount and bolt the guard to that. On the brake lever side I had to make an extender for the supplied bracket which moved the guard further away from the lever and slightly outboard to match the other side.

I would stick with the factory polaris guards or buy the type(s) which mount into the end of the handlebar.
